1. Specs: Being sliced into steaks in right-angle line to the length of the fish body, skin on, head off, viscera off, fins of all kinds being removed.

3. Sizes: high 2.5 - 3.0cm/ weigh 90 - 150g or 150 - 200g per steak portion.

 

4. Treatment: Not applied    

 

5. IQF freezing and glazing:

IQF glazing 5%, 10%, 15%, 20%

 

6. Packaging:

Bulk/cartons (5 - 10kgs/carton) or 1kg tray/ bag

 

Pangasius/ steaks:

skin on, fins off, size 90g-100g
